The unseen roots underground can be treated with herbicide

One of the most serious issues with leaving hidden tree roots underground is that those tree roots may later continue to sprout and send suckers to the service. This will impede your ability to mow and maintain your lawn. Suckers are also a tripping hazard.

Fortunately, you can hire a tree service to apply herbicide to a hidden root system. Check with the tree service you plan to use to grind out your stump. They may also be able to apply herbicide to the hidden root system of the stump and kill off those roots.
